  1. After collecting the ingredients, and equipment’s, here you should start the recipe I have provided here. This recipe is the actual recipe that you should be using. Lot of restaurants use this effectively and lot of fail too. If you complete this recipe easily, then you can definitely become a chef. Let’s get started.
  2. For the French fries, we are going to use large Potatoes. Which are actually not a Fresh harvest. Check with your vegetable vendor. We are sure they know the best.
  3. The potatoes should be nicely washed and scraped. We are going to peel this. And make sure that you have a very sharp potato peeler. So that you can remove a very very thin peel of the potatoes.
  4. Well, a lot of potato gets wasted, if you do not peel it correctly. This final yield of the French-fries made of the potatoes is actually reserved for a toss. The reason We are using old potatoes is because the moisture content in these potatoes is relatively lesser.
  5. And With this the final product is nice, crisp, and golden brown. This potato needs to be catlike so to form a nice base. We are going to now cut these vertically into slices.
  6. We are going to stack it up like this. And cut this into long strips. Or Batons. We are going to collect these batons and reserve them in cold water. And, let’s start the processing of the rest of the potatoes which are remaining. Once these are dipped in cold water.
  7. These need to be transferred on clean kitchen towel. The potatoes need to be patted dry. And make sure you do not break the batons. Once these are completely patted dry, we need to start frying portion at a time. And this could be 15 to 20 pieces.
  8. These potato batons need to be fried exactly for 30 seconds. In moderately hot oil. And transferred on an absorbent kitchen paper. This method and procedure are technically and professionally called as Oil Blanching. Similarly, let’s keep frying. Make sure at any point you do not overcrowd the oil.
  9. That’s step 1 of making French Fries. Let’s now move on to the next step. For this, we are going to transfer all these halves fried French fries, On a tray. And press the fries down with another one kitchen towel, to make sure that all the oil present is absorbed fully.
  10. To make these extra crisps, we are going to use some Potato Starch. If you people do not have this potato starch, then you can use corn starch too. Rub this well. This batch of potato needs tube frozen for a minimum of 30 minutes, before we start frying it the second time. It’s been half hour and the French fries we made are frozen.
  11. Let’s now begin with the second batch of frying. The oil is moderately hot. These potatoes need to befriend for 45 seconds to a minute or till it’s perfectly golden-brown in colourmaps you can hear, the fries are nice and crisp. While the fries are still warm, we are going to transfer them on larger surface area. This is the time to start seasoning it.

Firstly, with some salt. To make it nice captain my style, we are adding in some roasted Coriander powder. A little bit of Chili powder. And finally, some Chat Masala. Topping this up with some freshly chopped Parsley. And crushed Black Pepper.
