  • Milk powder – 2 tbsp
  • Ground garam masala – ½ tsp
  • Almonds – 4-6 (ground into a paste)

For Coating & Cooking:

  • Flour – 2 tbsp (to coat fish)
  • Oil – ½ cup (for frying)

Step-by-Step Preparation of Rogan Josh Fish

Step 1: Preparing the Yogurt Base

  1. Strain the yogurt: Place yogurt in a muslin cloth, tie it, and hang it for 30 minutes to remove excess water.
  2. Once thickened, mix it with milk powder, whisk well, and refrigerate.

Step 2: Prepping the Fish

  1. Clean and wash the fish fillets thoroughly.
  2. Sprinkle a light layer of flour over the fish fillets to help them hold their texture while frying.

Step 3: Frying the Fish

  1. Heat ½ cup oil in a pan.
  2. Shallow fry the fish fillets until golden brown on both sides. Remove and set aside.

Step 4: Making the Rogan Josh Sauce

  1. In the same pan, add whole garam masala and whole dried red chilies, sauté until fragrant.
  2. Add ginger-garlic paste, salt, red chili powder, ground cumin, and fennel seeds.

  1. Add the fried fish fillets back into the pan.
  2. Pour in ½ cup water and let it simmer for 8-10 minutes on medium heat.
  3. Add the prepared thick yogurt mixture, ground almonds, and garam masala powder.
  4. Cover and cook on low heat for 2-3 minutes to allow the flavors to blend.
